The Clos du Chapitre is a monopoly, located on the appellation Chapitre and entirely closed with a stone wall. This plot of more than 1 hectare is located just behind the family house.
As for the Préaux, the yields are strictly controlled through disbudding to produce a fine, expressive wine. At harvest, the grapes are carefully and rigorously sorted both in the vineyard and at the winery.
The fermentation lasts during 15 days with daily pumping-over and few punching of the cap. Then the wine is aged in oak barrels (10% are new) during 12 months, then blended and followed by further ageing in stainless steel tank.
Fine, elegant and structured, the Clos du Chapitre shows the very burgundian style of Pinot noir. The structure of this wine gives him a very good potential for ageing.
